Vineyards: vine-growing region: Marche, province of Ascoli Piceno. Location: in Campo delle Mura, between the communes of Acquaviva Picena and Monteprandone, in the center of the production area of Piceno Superiore. Age: 10 years old. Soil: alluvial marine sedimentary origin of Plio-Pleistocene and Miocene, with prevalence of sand and stone and outcrops of ammonites and marine fossils of prehistoric age.

Grape varieties and cultivation: grapes: 70% Montepulciano, 30% Sangiovese. Training system: against espalier and double guyot. Planting density: various from 2,200-4,000 plants per hectare. Yield per hectare: 60 q. of grapes controlled through the reduction of the bud load and thinning of the bunches at veraison.

Vinification: harvesting: late ripening grapes are harvested manually, selecting the best bunches and processed immediately with destemming and soft crushing. Vinification: in small fermentation tanks with frequent daily pumping over. Maceration on skins goes on for many days. Aging: after racking, the wine ages in 20-30 hl Allier oak barrels and barriques for 12 months. The aging in bottle lasts at least one year in thermo-conditioned warehouse.

Food pairings: this is a Piceno of great breed, so it deserves important matches with great dishes of fine beef, not disdaining pigeons, ducks, geese, mature sheep and seasoned pecorino cheese. Excellent on gnocchi in duck sauce.
