Vineyards: viticultural region: Marche, province of Ascoli Piceno.
Location: in the area between the communes of Offida, Ripatransone and Acquaviva Picena.
Age: 5-20 years.
Soil: of alluvial marine sedimentary origin from the Plio-Pleistocene and Miocene periods, with a prevalence of clay in the most inland areas while sand and stone prevail towards the coast.

Grape varieties and cultivation: grapes: 100% Passerina. Training system: guyot, double guyot and double bow.Density of planting: 3,000-4,000 plants per ha.Yield per hectare: 100 q of grapes with reduced load of buds.


Vinification: harvesting: by hand with careful selection of the bunches.Vinification: destemming of the grapes with cryomaceration of the skins in the must. Soft pressing, static decantation of the must obtained, fermentation at controlled temperature with selected yeasts and permanence in tank on the fine lees of fermentation for 3 months. Aging: in bottle in thermo-conditioned warehouse.

Food pairings: its great pleasantness makes it the protagonist of spring and summer cuisine. Taste it on seafood cuisine: from salads to boiled panocchie, from spaghetti and tagliatelle with mussels in white sauce to linguine with tuna and anchovies. Excellent on fried fish, squid and boiled fish.
