Vinification

Harvesting: early hand picking of the grapes in the coolest hours.
Vinification: soft pressing, fermentation at low temperature and subsequent refermentation in autoclave for the presa di spuma, which takes place very slowly. Aging: in bottle in thermo-conditioned warehouse.

Pairings: Its easy drinking and soft structure make it very agreeable as aperitif. Excellent with fish starters and with a wide range of seafood dishes.
